Lovely Fluffy American Pancakes
My kids adore these for breakfast on Saturday mornings.
Serves: 4 Adults (or 2 Adults and my 3 little kids) - About 12-15 4inch pancakes
Ingredients
270 grams self raising flour (or 270 grams plain flour with 1 teaspoon baking powder)
½ teaspoon salt4 tablespoons caster sugar
260ml oz milk
2 large egg
4 tablespoons olive oil
A little butter for cooking
- Put all the ingredients together in a large bowl using a hand whisk until no lumps to make the batter
- Heat a large pan
- Put a small knob of butter in the pan followed by a large table spoonful of batter
- Be sure to flip the pancakes before they burn (about 2 minutes per side)
- Repeat until all the batter has gone, stack pancakes on a plate to keep them warm
