Lovely Fluffy American Pancakes


My kids adore these for breakfast on Saturday mornings.

Serves: 4 Adults (or 2 Adults and my 3 little kids) - About 12-15 4inch pancakes

Ingredients
270 grams self raising flour (or 270 grams plain flour with 1 teaspoon baking powder)
½ teaspoon salt
4 tablespoons caster sugar
260ml oz milk
2 large egg
4 tablespoons olive oil
A little butter for cooking

  1. Put all the ingredients together in a large bowl using a hand whisk until no lumps to make the batter
  2. Heat a large pan
  3. Put a small knob of butter in the pan followed by a large table spoonful of batter
  4. Be sure to flip the pancakes before they burn (about 2 minutes per side)
  5. Repeat until all the batter has gone, stack pancakes on a plate to keep them warm
Serving suggestions: Serve with a dollop of creme fraiche or whipped double cream, some berries (strawberries, raspberries or blackberries) and a squirt of honey or maple syrup.
