Chocolate Mousse

Chocolate Mousse

This Chocolate Mousse is heavenly and so simple to make. Perfect for dinner parties and can be made the previous day (I usually put some cling film over them if made the previous night).

Serves: 4

Ingredients
4 large eggs
125g good quality dark chocolate (at least 70% cocoa)
6 heaped teaspoons caster sugar

  1. Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water. When the chocolate begins to melt, turn the heat off (or break the chocolate into pieces and use the microwave to melt - beware don't over do it).
  2. Separate the eggs.
  3. Whisk the egg whites into soft peaks, add the sugar, and whisk briefly.
  4. Mix the egg yolks quickly into the melted chocolate and then whisk in a third of the egg white. Fold the rest gently into the mixture until just combined (be careful not to overmix), and then put into bowls (or ramekins or martini glasses) and refrigerate for at least four hours to set.
Serving suggestions: Remove from fridge and serve with a spoonful of creme fraiche or whipped double cream (either of these helps to 'cut' the rich chocolate). You can also throw on a few raspberries  with the creme fraiche or whipped double cream. Also rather than using plain dark chocolate try using Ginger or Orange flavoured quality dark chocolate.

Beware: Contains uncooked egg.
