Salsa Verde
Ingredients
- Handful of basil - finely chopped
- Handful of mint - finely chopped
- 2 handfuls of flat-leaf parsley - finely chopped
- A red chilli - finely chopped
- Handful of small gerkins - finely chopped
- Handful of capers - finely chopped
- 2 cloves of garlic - finely chopped
- Half a dozen anchovies fillets - finely chopped
- Tablespoon of dijon mustard
- 8 tablespoons of extra virgin olive oil
- 3 tablespoons of red wine vinegar
- Salt and pepper to taste
Add all the ingredients to a bowl and mix. Make half an hour before serving. Goes well with pork or beef.
