Salsa Verde

 Ingredients

  • Handful of basil - finely chopped
  • Handful of mint - finely chopped
  • 2 handfuls of flat-leaf parsley - finely chopped
  • A red chilli - finely chopped
  • Handful of small gerkins - finely chopped
  • Handful of capers - finely chopped
  • 2 cloves of garlic - finely chopped
  • Half a dozen anchovies fillets - finely chopped
  • Tablespoon of dijon mustard
  • 8 tablespoons of extra virgin olive oil
  • 3 tablespoons of red wine vinegar
  • Salt and pepper to taste
Add all the ingredients to a bowl and mix. Make half an hour before serving. Goes well with pork or beef.
