Homemade Energy Bars

Ingredients

  • 200g Porridge Oats
  • 50g Ground Almonds
  • 50g Chopped or Flaked Almonds
  • 100g Crunchy Peanut Butter
  • 50g Chia Seeds
  • 100g Honey
  • 50g Caster Sugar
  • 100g Unsalted Butter - Melted
  • 90g 70% Dark Chocolate Bar 
Method

1. Preheat oven to 160c
2. Mix together the oats, almonds, peanut butter, chia seeds, honey, sugar and butter into a large mixing bowl
3. Line a baking tray with baking parchment / grease proof paper
4. Put the contents of the mixing bowl into the baking tray, firmly pat down the mixture with the back of a spoon
5. Place baking tray into the oven for 20-25 minutes
6. Melt the chocolate - Be careful not to over-melt it
7. After removing from the oven and cooling, pour / spread the melted chocolate on the baked oat block
8. Place the oat block in the fridge for an hour to help set the bars and chocolate
9. Remove from fridge, use a sharp long knife to cut into bars.
10. Store in a sealed container in the fridge
