Tarte Tatin

Ingredients

4 Granny Smiths Apples
60 grams unsalted butter
80 grams caster sugar
4 teaspoons of marmalade
A roll of shop bought puff pastry

Method

1. Peel and core the apples
2. Pre heat teh oven to 180C
3. Put the butter and sugar in a 20cm oven proof frying pan
4. On a hob heat and stir the butter/sugar mixture until it just starts to turn brown (about 6 - 7 minutes)
5. Carefully place the apples into the mixture (outside of the apple facing down)
6. Place in the oven for 10 minutes
7. Very CAREFULLY (with oven gloves) take out the pan and put 8 1/2 teaspoon blobs of the marmalade on the top of the apples
8. Place the puff pastry (usually half the roll) onto the apples and gently push down into the gaps. Trim with a knife around the edges and put 3-4 holes in the top to allow the air to escape
9. Again Very CAREFULLY (with oven gloves) put the pan back in the oven for a further 15 minutes
10. Again Very CAREFULLY (with oven gloves) take the pan out of the oven and place a large plate on top of the pan and flip

Serving suggestions: Cool a little and serve with a dollop of creme fraiche or some cream.
