Ma's Irish Fruit Cake

With a few modifications (for the original see the typed recipe below)

Ingredients

10 Tablespoons strong cold tea
2 Tablespoons of orange juice
450g Mixed Fruit
Zest of an orange
170g demerara sugar
1 teaspoon ground cinnamon
1/2 teaspoon each of ground nutmeg and all spice
1 lightly beaten egg
30g melted butter
255g self-raising flour

Instructions

1. Preheat oven to 180
2. Put tea, fruit and sugar in bowl - stir well and leave for several hours (preferably overnight)
3. Stir in the egg and butter. Fold in the flour
4. Put mixture in a lined loaf tin (21.5cm x 11cm) and bake for an hour and 15 minutes

Note: May need to put foil over the cake for the last half hour to stop burning

Serving suggestions: Take a slice and heat in the microwave for 20 seconds and eat with a spoon of creme fraiche.



Alternative Ingredients + Method above (Makes large loaf tin AND a small loaf tin)

10 Tablespoons strong cold tea
2 Tablespoons of orange juice
450g Mixed Fruit
Zest of an orange
170g demerara sugar
1 teaspoon ground cinnamon
1/2 teaspoon each of ground nutmeg and all spice
2 lightly beaten egg
50g melted butter
300g self-raising flour
1/2 teaspoon baking powder (Add with the flour)
