Grilled Courgette and Feta Mess

Great way to make courgettes a lot more exciting.

Ingredients
3 large courgettes sliced at an angle and 1/2 cm thick
150 grams of quality feta
Vinegarette with a couple of cloves of crushes garlic
Handful of fresh mint chopped
Salt, pepper and olive oil


  1. Slice the courgettes at an angle (1/2 cm thick) and toss in a bowl with some olive oil, salt and pepper.
  2. Heat a griddle pan and griddle the courgettes until nicely cooked (you will have to do this in batches)
  3. Remove the cooked courgettes and place on a serving plate
  4. Pour the garlic vinegarette over the courgettes
  5. Crumble the feta over the courgettes
  6. Sprinkle the mint over and serve
