Millie's Basque Cheesecake

Ingredients

750g Cream Cheese (OK to use basic cream cheese rather than Philly - And it's better for you as it has less bad e things in it)

200g Caster Sugar

300ml Sour Cream

2 Tbsp Plain Flour

2 Tsp Vanilla extract

4 Medium Eggs


Method

1. Preheat oven to 220c (fan)

2. Combine all ingredients into a bowl and mix with a hand mixer

3. Scrunch up a generous square of grease proof paper / baking parchment and flatten out and place into an spring-form baking tin (20 cm diameter). Push down to fill the corners.

4. Pour the contents of the mixing bowl into the lined tin. Tap the filled tin on the countertop to get rid of any large bubbles in the mixture.

5. Place in oven for 45 minutes or until the top of the cheesecake is burnt/dark brown. The cheesecake will still have a wobble in the centre.

6. Remove from the oven and set aside (still in the tin) for an hour to cool. The wobble will disappear.


Best served with a generous spoon of berry compote.
