Best Roast Potatoes Ever

Ingredients
A big pile of potatoes - Either King Edward or Maris Piper potatoes
A litte flour and semolina
Some goose fat and olive oil

Instructions
1. Peel the potatoes.
2. Par-boil them (not too much but just enough - about 6 to 8 minutes). Drain, put back in the pan, leave for 5 minutes without a lid on the pan (this allows them to dry out a little).
3. Add the flour and semolina, put the lid on the pan and shake so that the outside of the potatoes are roughed up a little. This makes them very crunchy when roasted.
4. Pre heat a roasting tin with the goose fat and olive oil in it. Carefully put the roughed up potatoes in to the roasting tin. Season well. Don't over crowd the roasting tin.
5. Put into the oven (180-190 °C) for around 40 to 45 minute turning from time to time.
