Creme Brulee



DELICIOUS
Inspired by recipe on the guardian website. This is simple and a very good creme brulee. Makes 4 ramekins or 6 smaller ones.

Ingredients

600ml double cream
1 vanilla pod (split down the middle and extract the seeds with a knife)
6 egg yolks
30g caster sugar
a few table spoons of demerara sugar to form the "brulee"

Instructions

1. Heat oven to 150c (fan)
2. Fill a baking tray with 2/3 of cold water and place ramekins inside
3. Put the egg yolks and caster sugar in a bowl and mix
4.Put the cream in a pan and add seeds and empty pod. 
5. Heat the cream and vanilla at medium heat until boiling - take off the hob
6. Remove the empty vanilla pod
7. Create the "Creme" by pouring the vanilla cream into the yolk and caster sugar mixture. Mix constantly while doing so
8. Pour the Creme mixture into the ramekins and place in the oven for 40 minutes  
9. Remove the ramekins from the water bath and allow to cool
10. Add a little demerara sugar on top of each ramekin and use a blow torch to caramelise the sugar
