Lara's Tiramisu
Ingredients
Pavesini Italian Sponge Biscuits (or Savoiardi Sponge Finger Biscuits)
500g Mascarpone
2 Fresh Eggs - Good quality as they are uncooked
Marsala Wine
Coffee (freshly brewed and strong)
4-6 tbsp Caster Sugar (depends on the size of the yolks)
Good quality cocoa powder for sprinkling
Method
1. Beat the yolks with the caster sugar until 'creamy and bubbles go pop'
2. Beat in the mascarpone
3. Separately beat the whites with a tiny pinch of salt until stiff peaks
4. Combine the creamy yolk/mascarpone/sugar mixture gently as to not knock the air out of it too much (add 1 third of the whites mixture and mix well then gently fold in the remain 2 thirds)
5. Put the coffee and marsala wine in a dish (50%/50% if adults only, if kids don't go so heavy on the marsala)
6. Fairly quickly soak the finger biscuits in the coffee marsala mixture and make a layer of soaked biscuits
7. Add a layer of the creamy egg/mascarpone/sugar mixture
8. Repeat (once or twice) steps 6 and 7
9. Place in the fridge to set for a few hours
10. Sprinkle with the cocoa before serving
