Tray roasted chicken thighs with feta
A fabulous tasty kitchen supper. Based upon a BBC Good Food recipe - It's been refined for the better. Serves 4.
Ingredients
8 chicken thighs (on the bone and skin on)
2 tbsp olive oil (or 1 olive oil and 1 rapeseed)
1 lemon (zest and cut into wedges)
4 shallots (roughly chopped)
4 rosemary sprigs
small pack of tarragon
300g asparagus (cut into 2)
300g fine green beans
250g peas (petit pois preferably)
100g feta
Method
1. Preheat the fan oven to 180c
2. Chop the Rosemary and tarragon roughly and well
3. Place the chicken in a roasting tin (skin side up), coat with the herbs, olive oil, shallots and lemon zest
4. Add the lemon wedges
5. Roast in oven in for 40-50 minutes
6. Cook the asparagus, green beans and peas (the first 2 a little al dente)
7. Add the asparagus, green beans and peas to the roasting tin and toss in the roasting juices
8. Crumble over the feta and serve by putting the roasting tray on the table
Serving suggestions
Goes great with mini roast potatoes.
