Anzac Biscuits
Ingredients for about 24 biscuits
100g Desicated Coconut
100g Porridge Oats
120g Melted Butter
120g Plain Flour
60g Caster Sugar
60g Demorara Sugar
1 1/2 Tbsp Golden Syrup
2 Tbsp Boiling Water
1 Tsp Bicarb of Soda
Method
- Mix all the ingredients well in a large bowl
- Heat oven to 175c (Fan)
- Line a baking tray with grease proof paper and a little extra butter
- Place balls of the biscuit mix (about 3cm in diameter) on the biscuit tray with ample room for then to spread during baking
- Bake for 12-14 minutes until golden brown
- Allow to cool a little and then transfer to a wire rack before they stick to the grease proof paper to finish cooling
