Anzac Biscuits

Ingredients for about 24 biscuits


100g Desicated Coconut
100g Porridge Oats
120g Melted Butter
120g Plain Flour
60g Caster Sugar
60g Demorara Sugar
1 1/2 Tbsp Golden Syrup
2 Tbsp Boiling Water
1 Tsp Bicarb of Soda

Method


  1. Mix all the ingredients well in a large bowl
  2. Heat oven to 175c (Fan)
  3. Line a baking tray with grease proof paper and a little extra butter
  4. Place balls of the biscuit mix (about 3cm in diameter) on the biscuit tray with ample room for then to spread during baking
  5. Bake for 12-14 minutes until golden brown
  6. Allow to cool a little and then transfer to a wire rack before they stick to the grease proof paper to finish cooling
