Flapjacks

Flapjacks

This is based upon a recipe from the BBC website.

Ingredients for around 30 Flapjacks
300g unsalted butter
300g demerara sugar
300g honey
600g rolled porridge oats
80g dried raisins or cranberries

Method

  1. Line 2 cake tins with grease proof paper
  2. Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved.
  3. Add the oats and fruit and mix well.
  4. Transfer the oat mixture to the prepared cake tin and spread to about 2cm thick. Smooth the surface with the back of a spoon. 
  5. Bake in a preheated oven at 180C/350F/Gas 4 for 15-20 minutes, until lightly golden around the edges, but still slightly soft in the middle.
  6. Let cool in the tin, then turn out and cut into squares.
