Blueberry Muffins
Ingredients
Makes eight to nine muffins
85g frozen blueberries
85g fresh blueberries (mashed up a little with the back of a fork)
120g plain flour
120g wholemeal flour
110g butter (softened)
200g demerara sugar
1 egg
1tsp baking powder
1tsp bicarbonate of soda
½tsp salt
240ml natural yogurt (or buttermilk)
Method
- Put all ingredients apart from the blueberries into a large bowl and mix
- Toss the frozen blueberries in a little plain flour (this will stop the blueberries sinking to the bottom during the baking)
- Mix in the blueberries (both the fresh and frozen)
- Divide the mix into 9 LARGE muffin cases (in a muffin tray) and place into a pre-heated oven (180C - fan) for 30-35 minutes
